The greatest eye health benefits associated with nourishment come from foods high in lutein. Lutein and zeaxanthin are stereoisomers (mirror images) and the only carotenoids (natural plant pigment) found in the eyes. Kale contains the most lutein. Lutein’s protective effect on the eyes is threefold. The antioxidant filters out blue light, which damages the macula over time, it protects the vasculature of the macular region and it prevents the oxidation of the fatty acids in the phosphoreceptor membrane.
Lutein and zeaxanthin are carotenoids naturally present in the macula of the human retina. They are more resistant to deterioration by prooxidants than other carotenoids. Diets containing at least 6 mg of lutein per day reduced the incidence of age related macular degeneration by 43 percent. Lutein also reduced the incidence of cataract formation and slowed their development.
